THE PRACTICE OF TEA

Not only to watch, but to do. With a bowl and a whisk, anyone can whisk matcha — and a little knowledge of etiquette makes any gathering warmer.

点てるWhisking a bowl

1

Boil water, then let it cool slightly (about 80°C).

Boiling water makes it bitter.

2

Warm the bowl with hot water, discard, and wipe dry.

Wetting the whisk tips here keeps them from breaking.

3

抹茶約2g(ティースプーン山盛り1杯)を茶こしでふるって入れる。

Sift about 2g of matcha (one heaping teaspoon) into the bowl.

Sifting alone removes lumps and transforms the taste.

4

Pour in 60–70ml of hot water.

Start with less — easier to adjust.

5

Whisk briskly back and forth, tracing an "M" shape.

Use a light wrist; back-and-forth, not circles.

6

When a fine foam forms, lift the whisk with a gentle spiral.

A softly domed center means success.

When you are invited

1

Leave coats and bags; change into white tabi or socks.

To enter the room with clean feet.

2

Walk the garden path quietly; rinse hands and mouth at the stone basin.

To shift the mind from the everyday to the gathering.

3

Bow at the entrance; first view the scroll and flowers in the alcove.

The scroll states the theme — the host's heart, received first.

4

When sweets are served, nod to the next guest ("excuse me for going first") and take one onto your kaishi paper.

Courtesy to fellow guests; finish the sweet before the tea.

5

Take the bowl with your right hand onto your left palm; turn it slightly to avoid drinking from its front.

A gesture of humility — not putting your lips to the bowl's finest face.

6

After drinking, wipe the rim, then admire the bowl held low.

Utensils are the host's chosen landscape; holding low guards against dropping.

7

Thank the host and leave quietly, leaving no trace.

The close of a once-in-a-lifetime meeting.
